Course intention within the general study plan context:  

It is an intermedate course where students learn to manage food preservation and transformation processes in a simulated environment, as well as safety systems in accordance with different processes for transformation and preservation, considering always current national and international guidelines. To attain this, they learn foundations of the design of a management system, including the operation of food, statistical tools, staff management and aspects of safety systems. This course requires prior knowledge on basic concepts of food processes; concepts and basic design of safety systems, national legislation associated with this subject. As a learning outcome, it is expected that students demonstrate their mastery of the competences of the area and cross-custting when describing the key criteria in the evidence of a system for process management and a safety system in prouction of food selected in a simulated environment.
